Icel Pratica Fish filleting knife with 18 cm long blade, black handle.
With a thin, flexible and pointed blade, this is the ideal knife for filleting medium-sized fish.
The blade was produced with 1.4116 steel (X50CrMoV15), with Molybdenum and Vanadium and was subjected to a tempering process in a continuous furnace with a controlled atmosphere (by Hydrogen) obtaining a hardness of 57 HRC.
The handle, resulting from the injection of Polyurethane directly onto the blade, allows for perfect fusion between the blade and the handle, preventing the infiltration of water, grease, or any substance, preventing the growth of bacteria, proven by the NSF certification that attests that this knife meets the safety, hygiene and performance standards required in food processing, such as in professional kitchens.
The combination of the material used in the handle with the texture of the mold makes the handle have an exceptional grip, even with wet or greasy hands, giving the user a real feeling of security, which translates into greater control of movements resulting in more regular and consistent cuts.
This knife can be used in professional kitchens, as it has been subjected to global and specific migration tests and can be subjected to frequent washing and high temperatures, always maintaining its characteristics intact.
